Recipe - Mango-Nectarine Salsa
Salsa! It’s so easy to make and to enjoy =]. This recipe comes from the fact that there were too many mangoes and nectarines in the refrigerator…so salsa it was! This is a nicely sweet snack but also a great addition to a summer seafood dish. Try it out.
Step 1: Ingredients (serving size: a small gathering)
- 1/3 bunch of cilantro, finely chopped
- 1/2 white onion, chopped
- 1 lime, juice only
- 1 tbsp chili garlic sauce (or other hot sauce)
- 2 nectarines, diced
- 2 mangoes, diced
The hardest part will probably be to “dice” mango. Mangoes have an interesting center that is not a pit or seeds – you will have to cut the mangoes in a different way. I have included a picture below of the parts to slice a mango into. To the far left is the middle section.
After you slice your mangoes up into the right parts, take one of the larger sections and make a crosshatch design with your knife. Make sure to slice all the way down to the skin but NOT through the skin.
Gently hold the edges of the piece and push the middle towards you so that you turn the mango “inside out” in a sense. Then, just slide your knife along the bottom to get out mango cubes!
The rest of the salsa should be simple enough. Chop up the onions & cilantro. Dice the nectarines. Put everything into a bowl.
Step 6: Completion and eating
Add the lime juice and chili sauce. NOW you may mix it up but be careful because the mango and nectarine are soft. Stirring too often might turn your salsa into mush. Enjoy with tortilla chips!
