Recipe - Shrimp & Corn Sauté



I was trying to figure out what to make but couldn’t really think of anything. Then I decide that since I had had rice the night before, I wanted a different type of carb. That led to pasta…so I considered the meats in my fridge. Shrimp came up and after some thinkage, here’s what I came up with! I don’t know what to call it but you can look at the deliciousness and come up with a proper name for it for me =D.
 
Step 1: Ingredients (serving size: 3-4 small dinner portions)
  • garlic salt (to taste)
  • black & red pepper (to taste)
  • 2 tbsps butter
  • 2 roasted red peppers, sliced
  • 2 cups corn
  • 4-5 leaves of basil, sliced
  • 8 oz. white shrimp, deveined and shelled, size 31-40 or larger
  • 12 oz. rotini pasta
Step 2: Preparing the ingredients
Boil water for your pasta. While this is going on, you can shell your shrimp and slice the peppers. I used red peppers from a jar that I got at Costco; I don’t exactly have the right material to roast the peppers properly over an open flame. You can also start melting the butter in a skillet at this point.





Step 3: Corn and basil additions
Add the corn and basil to the skillet. Put your pasta into the pan.



Step 4: Cooking the shrimp
Add the shrimp and roasted red peppers to the skillet. Mix it up well. Add the salt and pepper medley. Drain the pasta.



Step 5: Completion and eating
Mix together with the pasta and enjoy.
