Recipe - Red Onion Mushroom Salad
What the heck should I be naming these salads? I have no idea since they aren't really "themed" salads (ex. Southwestern) but here's a delicious healthy combination that we put together for dinner one night. Keep in mind that we have entree-sized salads.
Step 1: Ingredients (serving size: 2)
Italian dressing, to taste
1/8 red onion, thinly sliced
1/2 cup marinated artichoke hearts
1 head red-leaf lettuce
2 Roma tomatoes, sliced
6 white mushrooms, sliced
8 oz. chicken breast strips, grilled
Step 2: Prepping the ingredients
I noted to use 1/8 of a red onion but it's really to taste. I'm not even sure if you want to use a full eighth because it can get a tad overbearing. Make sure the slices are very thin though because it will dull down the sting; you'll taste more of the sweetness of the red onion in moderate amounts. Tear your lettuce and slice everything accordingly. You can grill the strips of chicken breast whilst prepping the veggies.
Step 3: Finishing
Mix everything in two bowls and toss with Italian dressing to taste. If it's one of your first times eating mushrooms raw, I suggest pairing the slices with red onion (it was Duc's first time so it tasted strange to him) to help ease you into it. Enjoy!
