Recipe - Walnut Mayonnaise Shrimp
My mom tried to recreate this popular Chinese dish and didn't do too well so I wanted to give it a shot myself. After some internet sleuthing, here was the result. By the way, mine tasted spot on except for the shell itself. It wasn't crispy. Anyone have a solution for this? Otherwise, the batter was right and so was the sauce...
Step 1: Ingredients (serving size: 4)
- sesame seeds
- 1/4 cup mayonnaise
- 1/2 cup walnuts, halved
- 2/3 cup glutinous rice flour
- 2/3 cup sugar
- 1 cup water
- 1 cup vegetable oil
- 1 lb shrimp, butterfly-cut, de-veined, and de-shelled
- 1 tbsp condensed milk
- 2 tbsps honey
- 4 egg whites
Step 2: Preparing the walnuts and shrimp
Boil together your sugar and water in a pot. Once it is at a rolling boil, add walnuts for approximately 2 minutes before placing on a baking sheet to dry. Remove the shells and veins from shrimp; butterfly.
Step 3: Creating batter & frying
Whip whites until foamy. Add the rice flour. Depending on what container you're using, heat up the oil for frying. Coat the shrimp thoroughly in the batter and fry until golden brown. Place on a plate with a towel to soak up the oil.
Step 4: Finishing
Make the sauce by mixing together the honey, condensed milk, and mayo. Toss with the shrimp & walnut, and finish with sprinkling of sesame seeds.
